    As a matter of fact Texas Lone Star Tamales has a delicious combo pack; both savory & "sweet" -- the sweet mex. pumpkin is my fav. Sale on right now.

    The pumpkin tamales sound good. Are they meant as a dessert, or as a sweeter side dish (like sweet potatoes)? Their gift packs look really good, and reasonably priced too.

    They aren't as sweet as you might expect (not like pumpkin pie) more like savory sweet potatoes (as you said) you would bake but inside a tamale an unexpected and yummy side dish. The cinnamon raisin apple IS more dessert like and needs nothing but heating. The gift packs and prices are excellent.

  2. As of today, August 8th, 2011, we are at 38 days of 100+ degree temperatures here in Fort Worth, Texas.

    Looks like we may be going beyond everyone's guess, except Martha, Trista, and Dennis.

    Tomorrow is only predicted to be 99 degrees.  So, the streak might end.  We shall see!  :)

  4. When your tamales arrive, if they are not frozen, they can be refrozen or refrigerated.  In the vacuum-sealed bags, they can stay in the freezer 12 months and in the refrigerator for 4 weeks.

    Here are instructions for re-heating them:

    ·      One way is to boil them in the bag.  Place them in the boiling water for 15-20 minutes from a refrigerated/thawed state (5-10 minutes more if frozen). 

    ·       For steaming, remove tamales from bag, and place in a hot steamer for 15-20 minutes from a thawed state (5-10 minutes more if frozen).

    ·       For oven baking, preheat oven to 325.  Remove tamales from bag, wrap in foil, and place them on sheet pan.  Bake 15-20 minutes if thawed, and 20-25 if frozen.

    ·       For microwave, cut a hole in the bag.  From thawed state, heat one bag at full power 3-4 minutes.  If frozen, heat at 50% power 3 minutes; turn the bag over, then heat at full power for 1-2 minutes more.

  5. We have purchased two large shipments of your tamales and love them.  I prefer to oven bake but have encountered problems of the tamales and their husk sticking to the alum. foil.  Tonight I sprayed the foil with Pam (any spray like that would work) before baking and the results were perfect.  You might wish to add that to your preparation directions.
